Clams Drawn in Butter

- 1/3 cup Corn Meal
- ½ pound of butter
- Step 1: Soak 1/3 cup corn meal in cold water for 20 minutes before steaming.
- Step 2:Gently boil butter to remove any milk solids
- Step 3: Simply bring ½ lb. butter to a low boil until it begins to froth.
- Step 4: For the next 15 min, continue to skim the “foam” with a ladle until surface is clear.
- Step 5: Gently pour off the clear butter into a clean warm bowl
