United StatesThe Hood Canal Oyster are much larger than the standard oyster bar oysters, in fact when shucking these oysters, I can find 2-3 additional oysters attached to one very large one. Since these are larger, using a double cracker maybe needed when eating raw. The larger shells are great for oysters Rockefeller or Churchill. I know these larger variety are best for cooking/frying; they do have a wonderful flavor raw. I do recommend rinsing well in a large bowl clear water to help remove the bits/chunks of shell from the meat then hand picking the meat from the bowl; your teeth will thank you later.
