Cucumber Rounds with Smoked Salmon and Lemon Caper Macadamia Ricotta

Ingredients

  • ½ English cucumber
  • 2 oz. smoked salmon or lox
  • ½ cup macadamia nuts
  • 3 T water
  • 1 T lemon zest
  • 1 T lemon juice
  • ½ t salt and pepper
  • 1 T capers

Directions

  1. Wash and cut the cucumber into rounds, leaving the skin on.
  2. In a food processor or high powdered blender, combine the macadamia nuts, water, lemon zest, lemon juice, salt, and pepper. Blend until smooth and creamy.
  3. Add the capers then pulse a few more times, leaving some of the capers intact.
  4. Spread a bit of Macadamia Ricotta on each cucumber round, then top with a crumble of smoked salmon.
  5. Optional to garnish with dill, lemon zest and extra fresh cracked pepper
