Prawns Piccatta

  • 1 ½ tbsp. of butter
  • 1 tbsp. chopped garlic
  • ¼ cup white wine
  • ¼ cup salt
  • ¼ cup pepper
  • 1 ½ lbs. of prawns
  • 1 cup sliced mushrooms
  • Juice of one lemon
  • Chopped Dill
  • Capers
  • Green Onions

Cooking Directions

Step 1: Saute together 1 ½ tbsp. butter, 1 tbsp chopped garlic, ¼ cup white wine, salt and pepper to taste.
Step 2: Add 1 ½ lbs of prawns and turning once, cook for two minutes over medium on low heat.
Step 3: Add 1 cup sliced mushrooms, juice of one lemon and chopped dill, cappers or green onions to taste.
Step 4: Toss with your favorite freshly cooked pasta.
Step 5: Serve Immediately.

    To serve, warm up the emmer in a saucepan over medium with just a little stock for it to absorb while it reheats. Once it’s warm, add dandelion greens and toss to gently wilt. Add the vinaigrette to taste. (Be generous; the acidity is necessary to liven the grain and fish.) Add salt and pepper to taste.
