Spicy Tuna Rolls are a fun and healthy treat that will delight even the pickiest of eaters. A fresh, Asian-inspired take on a game day appetizer, you can make the perfect Spicy Tuna by following 3 simple rules. Rule 1: Use Only Sushi Grade Tuna When making sushi at home, it's essential to use sushi grade fish. Sushi grade refers to high-quality seafood that is safe to prepare and eat raw. While there is no defined regulations for what is sushi grade, the label is given for seafood that has been inspected by fishmongers and determined to be safe to consume raw. Rule 2: Size Matters When choosing rice for your sushi, remember that size matters. Japanese sushi rice is a lot different from your normal white rice. It is a short grain rice that develops a slightly sticky texture when cooked. Using short grain rice is important because it binds your ingredients together and maintains moisture. To begin preparing the rice, rinse 2-3 cups of rice in a bowl or colander under a faucet until the water runs clear. Once your finished, bring the rice and water to a boil in a saucepan and cover with a lid, allowing to simmer for 15-20 minutes after it has reached the boiling point. After the time is up, leave the rice to settle for 10 minutes in the covered pan. Combine a mixture of rice vinegar, sugar and salt to the rice according to taste, making sure to stir in the ingredients with a light motion to maintain the fluffy texture of the rice. Allow the rice to cool for 30 minutes and it is ready some sushi rolling action! Rule 3: Use proper sushi rolling tools In order to make perfect bite-size morsels, it's important to use a bamboo rolling mat to roll your sushi. Mats are inexpensive and can be purchased at most Asian or world food markets. While it is possible to make rolls with saran wrap or parchment paper, for the novice sushi chef we would suggest to be safe and purchase a mat. Now that you've learn the rules, here is a recipe for Spicy Tuna Rolls for your game day pleasure. Cut your sushi grade Ahi Tuna into small cubes and place in a bowl. Combine Sriracha or red pepper sauce, 1-2 tablespoons of Mayonnaise, and a bit of diced green onion to the tuna. Place a sheet of Nori seaweed on your bamboo mat, with the shiny side down. Place a thin layer of sushi rice followed by the tuna mixture. Optionally, sprinkle the rice with sesame seeds for added texture. To roll, dampen your fingers and fold the end of mat towards you. Apply moderate pressure in order to create a tube shape and remove the mat from the roll. Slice the roll into even pieces and refrigerate before serving.
