Black Cod Udon Recipe

Ingredients:
- Fish
- 1 lb black cod
- 2 T vegetable oil
Marinade:
- 1clove garlic (minced)
- 1 tsp red pepper flakes
- ½ lemon zested
- 1 tsp granulated sugar
- ½ C olive oil
Pasta:
- 1 package
- Spaghetti (cooked and drained)
- 2 Carrots (sliced into julienne)
- ½ C Green onions (sliced)
- Olives (optional)
- 1 T olive oil
Directions:
In bowl combine all marinade ingredients, add fish flesh side down and let sit for 20-30
minutes.
Remove fish from marinade and put the remaining marinade in a saucepan. Reduce the
sauce by half.
Cook spaghetti and drain. Mix into reduced sauce.
In separate pan, add olive oil over medium heat and sauté carrots for 4-5 minutes until
tender. Mix into spaghetti and sauce mixture.
In a sauté pan, heat vegetable oil over medium heat. Cook fish in hot pan for 4-5 minutes
on each side starting with flesh side down. Internal temperature should read 120 degrees.
Plating: Serve fish on top of pasta and garnish with green onions
