  • Fish
  • 1 lb black cod
  • 2 T vegetable oil
  • Marinade
  • 1clove garlic (minced)
  • 1 tsp red pepper flakes
  • ½ lemon zested
  • 1 tsp granulated sugar
  • ½ C olive oil


  • 1 package
  • Spaghetti (cooked and drained)
  • 2 Carrots (sliced into julienne)
  • ½ C Green onions (sliced)
  • Olives (optional)
  • 1 T olive oil


In bowl combine all marinade ingredients, add fish flesh side down and let sit for 20 - 30 minutes. Remove fish from marinade and put the remaining marinade in a saucepan. Reduce the sauce by half. Cook spaghetti and drain. Mix into reduced sauce. In separate pan, add olive oil over medium heat and sauté carrots for 4 - 5 minutes until tender. Mix into spaghetti and sauce mixture. In a sauté pan, heat vegetable oil over medium heat. Cook fish in hot pan for 4 - 5 minutes on each side starting with flesh side down. Internal temperature should read 120 degrees. Plating: Serve fish on top of pasta and garnish with green onions
