United StatesI ordered a VERY BIG salmon to be overnighted to my home in California. The store called me the morning it went out to make sure of my order, and the fish arrived promptly the next day. It was in perfect, fresh condition with no fishy smell. I enjoyed wrestling it into the fridge and arranging it so that its face would greet anyone opening the refrigerator door. I stuffed the belly cavity with herbs, lemon and salt, then slow-roasted it at 250 degrees, which took about an hour and a half. After chilling the fish overnight, I removed the top skin and decorated the salmon with cucumber slice "scales," then served it whole on a granite slab, with Green Goddess sauce on the side. It was a great presentation that wowed my whole family. The flavor was divine! Everyone took a doggie bag home. Making a whole salmon the centerpiece of the party wasn't cheap, but so very worth the cost. And it made about 20 servings, so the cost per serving was actually quite reasonable.
