Pan Seared Halibut

With Summer Salsa

INGREDIENTS

1oz mint
1oz Italian parsley 
1 shallot bulb
2 cloves garlic 
1 pt yellow cherry tomatoes
1 pt goose berries 
1 yellow bell pepper
1 red chili 
1 orange 
1 lemon
Edible flowers (optional)
Micro greens (optional)

DIRECTIONS

Prep the Salsa 

  • Wash and rinse fresh produce 
  • Cut tomatoes and golden berries uniformly in half 
  • Cut shallot, garlic, yellow bell pepper and red chili into ⅛ dice 
  • Season with salt and pepper to taste
  • Mix well, set aside

Prep the Halibut

  • Preheat oven to 400
  • PRO TIP: Generously salt the halibut skin, after 5 minutes pat dry, then re-salt the skin
  • Heat medium-high skillet 
  • Drizzle pan with olive oil and place halibut skin side down
  • After 4-6 minutes check for doneness
  • Finish in the oven for an additional 3-5 minutes
  • Remove fish from pan and let rest for 5 minutes, in that time finish preparing the salsa

Finish Salsa

  • Stir in mint and parsley
  • Add Cara Cara orange zest + juice
  • Mix until bright and fully combined

Assemble

  • Place Halibut skin side up on plate 
  • Spoon salsa over the top and serve
