Alaskan King Salmon w/ blackberry thyme glaze
INGREDIENTS
- 1lb Alaskan King Salmon Fillet
- Cedar Plank(s) for grilling
- ½ pint Fresh Blackberries
- Blackberry Preserves
- 1 bunch Fresh Thyme
- Fresh Parsley
- Orange zest
- Salt & Pepper
- Olive Oil
- Edible Flowers (optional)
PREPARATION:
- Soak cedar plank(s) in water overnight or at least 4 hours before grilling
- Preheat grill to med high
While grill is heating:
- Pat the Salmon dry
- Cut the Fillet to size (if desired or based on plank size)
- Salt and pepper fillet
- Place on cedar plank, skin side down
- Option to place fresh thyme sprigs under the fish to infuse more herbal flavor
- Spread a generous layer of blackberry preserves across the top of the fish
Once the grill is heated:
- Place cedar plank(s) on the grill and cover
- Cook for 10-20 min.
HERB SALAD:
- Slice berries in half
- Remove Thyme leaves from stems
- Roughly chop fresh parsley
- Zest citrus
- Toss all of the ingredients in a small bowl with touch of olive oil and salt and pepper to taste.
- Garnish with edible flowers for a colorful spring presentation.
