Alaskan King Salmon w/ blackberry thyme glaze

    Alaskan King Salmon w/ blackberry thyme glaze

    INGREDIENTS

    • 1lb Alaskan King Salmon Fillet
    • Cedar Plank(s) for grilling
    • ½ pint Fresh Blackberries
    • Blackberry Preserves
    • 1 bunch Fresh Thyme
    • Fresh Parsley
    • Orange zest 
    • Salt & Pepper
    • Olive Oil
    • Edible Flowers (optional)

     

    PREPARATION:

    • Soak cedar plank(s) in water overnight or at least 4 hours before grilling
    • Preheat grill to med high


    While grill is heating:

    • Pat the Salmon dry
    • Cut the Fillet to size (if desired or based on plank size)
    • Salt and pepper fillet
    • Place on cedar plank, skin side down
    • Option to place fresh thyme sprigs under the fish to infuse more herbal flavor
    • Spread a generous layer of blackberry preserves across the top of the fish

     

    Once the grill is heated:

      • Place cedar plank(s) on the grill and cover
      • Cook for 10-20 min.


      HERB SALAD:

      • Slice berries in half
      • Remove Thyme leaves from stems
      • Roughly chop fresh parsley
      • Zest citrus
      • Toss all of the ingredients in a small bowl with touch of olive oil and salt and pepper to taste.
      • Garnish with edible flowers for a colorful spring presentation.
