Cajun Seared Salmon with Chipotle Cashew Cream

Ingredients for the Salmon

  • 10 oz. salmon fillets
  • 2 t olive oil
  • 2 t honey
  • 1 T Cajun Seasoning

Ingredients for the Chipotle Cashew Cream

  • ½ cup raw cashews, soaked overnight and drained
  • ¼ cup water
  • 1 t chipotle in adobo sauce
  • Juice of ½ lime
  • Generous pinch of salt

Directions

  1. Prep the salmon. If possible, let the fish sit on the countertop for an hour so it comes to room temperature. Rub the olive oil, honey, and Cajun seasoning over the top of the fish and place skin side down in a baking dish. Optional to cover the dish with aluminum foil for easier cleanup.
  2. Turn on oven to low broil. Broil salmon for 8-10 minutes. The fish should be opaque throughout and easily flake with a fork.
  3. Meanwhile, make the Chipotle Cashew Cream. Combine the ingredients in a high powered blender or food processor and blend on high until the mixture becomes creamy. Store in the fridge. Cashew cream will last for up to a week.
  4. Optional to serve next to roasted sweet potatoes and steamed chard.
