    Marinated Black Cod

    Ingredients

    • 1.5 lb black cod (cut in 6-7 oz portions per person)
    • 1 T vegetable oil

    Marinade

    • 1 orange (zested and juiced)
    • 2 clove garlic
    • 1 tsp ginger
    • 2 T brown sugar
    • 1 tsp red chili flakes
    • 2 T soy sauce
    • Mix together in bowl.

    Directions

    1. Heat oven to 350 degrees
    2. Marinade the fish for 20-30 minutes. Let the fish marinade in a bowl on the counter (not the fridge) so that it isn’t cold for cooking. Pat dry with paper towel. Heat stainless steel pan over medium high heat, add neutral oil, add fish skin side up (flesh side down). Sear for 2-3 minutes then flip and sear for 2-3 minutes. Let finish in the oven for 3-4 minutes until internal fish temperature is 118-120 degrees.
    3. Tastes great served with a noodle or rice stir fry.
