Paleo Scallop Wraps

  • snacks

Ingredients

  • 15 sea scallops (2-3 per person)
  • 1 T peanut oil

Marinade

  • 2 tsp garlic minced
  • 2 tsp ginger grated
  • 2 tsp fish sauce
  • 2 T lime zest
  • 2 tsp minced jalapeno

Directions

  1. Mix all ingredients together. Marinate scallop from 1-2 hours. Cooking: wipe of marinade. Heat up pan over high heat, add peanut oil, cook scallops for 3 minutes on each side until brown and cooked through.

Peanut Sauce Ingredients

  • ½ C creamy peanut butter
  • ½ C Coconut Milk
  • 1 tsp fish sauce
  • 1 tsp fresh ginger grated
  • 1 T soy sauce
  • 1 T lime juice
  • 2 T peanut oil (or sesame oil)

Directions

  1. Mix all ingredients in a bowl together

Chili Sauce Ingredients

  • 2 T sweet chili sauce
  • 2 T chili garlic paste
  • 2 T hot chili oil
  • 2 T peanut oil

Directions

  1. Mix all ingredients together

Wrap

  • 1 head utter Lettuce
  • 2 Carrot- grated
  • 3 Scallions- sliced
  • Garnish with crushed peanuts

Directions

  1. Stuff lettuce wraps with carrots, scallops, and scallions. Serve with peanut sauce and chili sauce. Garnish with crushed peanuts.
