Paleo Scallop Wraps

Ingredients
- 15 sea scallops (2-3 per person)
- 1 T peanut oil
Marinade
- 2 tsp garlic minced
- 2 tsp ginger grated
- 2 tsp fish sauce
- 2 T lime zest
- 2 tsp minced jalapeno
Directions
- Mix all ingredients together. Marinate scallop from 1-2 hours. Cooking: wipe of marinade. Heat up pan over high heat, add peanut oil, cook scallops for 3 minutes on each side until brown and cooked through.
Peanut Sauce Ingredients
- ½ C creamy peanut butter
- ½ C Coconut Milk
- 1 tsp fish sauce
- 1 tsp fresh ginger grated
- 1 T soy sauce
- 1 T lime juice
- 2 T peanut oil (or sesame oil)
Directions
- Mix all ingredients in a bowl together
Chili Sauce Ingredients
- 2 T sweet chili sauce
- 2 T chili garlic paste
- 2 T hot chili oil
- 2 T peanut oil
Directions
- Mix all ingredients together
Wrap
- 1 head utter Lettuce
- 2 Carrot- grated
- 3 Scallions- sliced
- Garnish with crushed peanuts
Directions
- Stuff lettuce wraps with carrots, scallops, and scallions. Serve with peanut sauce and chili sauce. Garnish with crushed peanuts.
