Salt Baked Trout

Ingredients

  • 2 Trout (whole)
  • 1 Lemon sliced
  • 2 sprigs Thyme
  • season with salt and pepper
  • 6 C salt
  • ¼ C water

Directions

  1. Preheat oven to 425 degrees.
  2. Add lemon slices and thyme to inner cavity.
  3. In mixing bowl combine salt and water until the salt feels like snow. You don’t want it too moist.
  4. Place a layer of salt on a baking sheet, place fish on top. Cover the fish with remaining salt. Make sure it is packed tightly.
  5. Bake in oven for 18 minutes at 425 degrees. Once cooked, remove from oven, crack salt off and carefuly scrape it off the fish. Remove the skin and serve.
