Smoked Salmon Alfredo Linguine
Ingredients:

1lb Cold Smoked Salmon
-
Linguine (or pasta of choice)
-
1 pint heavy cream
-
4 Garlic cloves
-
1lb ButtonMushrooms
-
1 small Zucchini
-
½ tablespoon Butter
-
Parmigiano reggiano
-
Salt and Pepper
-
Preparation:
-
Bring water to a boil in a large sauce pan
-
Roughly chop Smoked Salmon
-
Slice mushrooms
-
Smash and chop garlic cloves
-
Finely cut or shred zucchini into zoodles
-
Grate Parmesan
-
Boil noodles (3 minutes for fresh pasta, or follow instructions on packaging)

Strain and toss noodles in a small amount of olive oil - Set aside
Alfredo Sauce:

Set burner to Medium heat
-
Drizzle 1tbsp olive oil into a large Sauté pan

Add garlic and sauté for 30 sec. or until fragrant
-
Add sliced mushrooms, salt and pepper
-
Sauté until soft (about 3 minutes)

Add ¼ cup marsala - simmer until reduced
-
Stir in pint of milk/cream and most of the grated cheese
-
Simmer until cheese has melted (about 2 minutes)

Stir in chopped smoked salmon
-
Toss the noodles and fresh zucchini strips in the alfredo sauce until well combined
-
Top each dish with additional smoked salmon and grated parmesan
