Smoked Salmon Alfredo Linguine

    Smoked Salmon Alfredo Linguine

    Ingredients:

      • 1lb Cold Smoked Salmon

      • Linguine (or pasta of choice)

      • 1 pint heavy cream

      • 4 Garlic cloves

      • 1lb ButtonMushrooms

      • 1 small Zucchini

      • ½ tablespoon Butter

      • Parmigiano reggiano

      • Salt and Pepper


    Preparation:

    • Bring water to a boil in a large sauce pan

    • Roughly chop Smoked Salmon

    • Slice mushrooms

    • Smash and chop garlic cloves

    • Finely cut or shred zucchini into zoodles

    • Grate Parmesan

    • Boil noodles (3 minutes for fresh pasta, or follow instructions on packaging)

    • Strain and toss noodles in a small amount of olive oil - Set aside


    Alfredo Sauce:

    • Set burner to Medium heat

    • Drizzle 1tbsp olive oil into a large Sauté pan

    • Add garlic and sauté for 30 sec. or until fragrant

    • Add sliced mushrooms, salt and pepper

    • Sauté until soft (about 3 minutes)

    • Add ¼ cup marsala - simmer until reduced

    • Stir in pint of milk/cream and most of the grated cheese

    • Simmer until cheese has melted (about 2 minutes)

    • Stir in chopped smoked salmon

    • Toss the noodles and fresh zucchini strips in the alfredo sauce until well combined

    • Top each dish with additional smoked salmon and grated parmesan
