Slow Roasted Citrus Salmon

Ingredients

  • 2 salmon filets (4- 6 oz. each)
  • 1 fennel bulb
  • 1 blood orange
  • 1 lemon
  • 1 lime
  • Extra virgin olive oil
  • Sea salt & pepper

Cooking Directions:

  1. Preheat the oven to 275.
  2. Thinly slice the fennel and citrus and toss with olive oil and a high-quality sea salt and fresh pepper. Place in shallow baking dish lined with parchment paper.
  3. Place salmon over the fennel and citrus, drizzle with olive oil and sprinkle with salt and pepper.
  4. Bake for 35 minutes until medium rare.

Chef's notes: Garnish with the feathery fennel leaves and citrus zest for more flavor. This pairs perfectly with a green salad and a whole grain such as brown rice or quinoa.

Serves 2, 45 minutes total to prep and cook
