Slow Roasted Citrus Salmon

Ingredients
- 2 salmon filets (4- 6 oz. each)
- 1 fennel bulb
- 1 blood orange
- 1 lemon
- 1 lime
- Extra virgin olive oil
- Sea salt & pepper
Cooking Directions:
- Preheat the oven to 275.
- Thinly slice the fennel and citrus and toss with olive oil and a high-quality sea salt and fresh pepper. Place in shallow baking dish lined with parchment paper.
- Place salmon over the fennel and citrus, drizzle with olive oil and sprinkle with salt and pepper.
- Bake for 35 minutes until medium rare.
Chef's notes: Garnish with the feathery fennel leaves and citrus zest for more flavor. This pairs perfectly with a green salad and a whole grain such as brown rice or quinoa.
