Pan Seared Halibut with Roasted Salsa

Pan Seared Halibut with Roasted Salsa

Salsa Ingredients
- 2 medium shallots
- 5 cloves of garlic
- 1 pint cherry tomatoes (choose heirloom for more color)
- 1 jalapeño, seeds removed and diced
- 1 small bunch of scallions
- 1/2 a lime, juiced
- 1/4 cup cilantro, chopped
- Salt and pepper
Salsa Directions
- Remove skin from 2 shallots, roast for 10 mins
- Peel 5 cloves of garlic, roast for 4 minutes
- Roughly chop shallots and garlic after roasting, combine in a mixing bowl
- Add 1 pint cherry tomatoes, cut into quarters
- Add 1 diced jalapeño, seeds removed
- Add 3 scallions, ends removed and thinly sliced
- Add juice of 1/2 lime
- Add chopped cilantro
- Salt and black pepper to taste
Pan Seared Halibut Ingredients
- 2 lbs Halibut filet, skin removed
- 2 tbsp butter
- Salt and pepper
Pan-Seared Halibut Directions
- Preheat oven to 400 F
- Pat halibut filet dry with paper towel and season with salt and black pepper on one side
- Heat a cast iron pan to medium high, melt 2 tbsp butter in pan
- Lay the Halibut filet in the pan seasoning side down and sear for 5 minutes
- Add salt and pepper to the unseasoned side of Halibut
- Flip and sear for another 5 minutes
