Excellent Red Snapper

First I cut off the sharp fins and head and used it for soup broth.. I baked two of these in light olive oil with lemon and onion slices. I seasoned with herbs like fresh bay leaf, rosemary, basil, black pepper etc. Before baking, I brined the fish with Celtic sea salt for two hours to firm up the meat. Then when done, I topped it with sour cream dip and served it with basmati rice topped with stir fried multi colored bell peppers and added the veggie and herb mix from the bake. It was delicious. I kept 4 frozen for later. I did not filet it and ate the skin but pulled out the bones to maximize on edible meat yield
