Pan Seared Halibut with Roasted Salsa

Salsa Ingredients

  • 2 medium shallots
  • 5 cloves of garlic
  • 1 pint cherry tomatoes (choose heirloom for more color)
  • 1 jalapeño, seeds removed and diced
  • 1 small bunch of scallions
  • 1/2 a lime, juiced
  • 1/4 cup cilantro, chopped
  • Salt and pepper

Salsa Directions

  1. Remove skin from 2 shallots, roast for 10 mins
  2. Peel 5 cloves of garlic, roast for 4 minutes
  3. Roughly chop shallots and garlic after roasting, combine in a mixing bowl
  4. Add 1 pint cherry tomatoes, cut into quarters
  5. Add 1 diced jalapeño, seeds removed
  6. Add 3 scallions, ends removed and thinly sliced
  7. Add juice of 1/2 lime
  8. Add chopped cilantro
  9. Salt and black pepper to taste

Pan Seared Halibut Ingredients

  • 2 lbs Halibut filet, skin removed
  • 2 tbsp butter
  • Salt and pepper

Pan-Seared Halibut Directions

  1. Preheat oven to 400 F
  2. Pat halibut filet dry with paper towel and season with salt and black pepper on one side
  3. Heat a cast iron pan to medium high, melt 2 tbsp butter in pan
  4. Lay the Halibut filet in the pan seasoning side down and sear for 5 minutes
  5. Add salt and pepper to the unseasoned side of Halibut
  6. Flip and sear for another 5 minutes
