Cucumber Rounds with Smoked Salmon and Lemon Caper Macadamia Ricotta

Ingredients
- ½ English cucumber
- 2 oz. smoked salmon or lox
- ½ cup macadamia nuts
- 3 T water
- 1 T lemon zest
- 1 T lemon juice
- ½ t salt and pepper
- 1 T capers
Directions
- Wash and cut the cucumber into rounds, leaving the skin on.
- In a food processor or high powdered blender, combine the macadamia nuts, water, lemon zest, lemon juice, salt, and pepper. Blend until smooth and creamy.
- Add the capers then pulse a few more times, leaving some of the capers intact.
- Spread a bit of Macadamia Ricotta on each cucumber round, then top with a crumble of smoked salmon.
- Optional to garnish with dill, lemon zest and extra fresh cracked pepper
