Roasted Pesto Salmon With Toasted Walnuts

Pesto Ingredients
- ½ C basil leaves
- 1 garlic clove - minced
- ¼ c shredded parmesan
- 2 T walnuts (or pine nuts)
- 1 T lemon
- 1 tsp red pepper flakes (optional)
- ¼ C olive oil
Salmon Ingredients
- 1 filet salmon (pin bones removed)
- 3-4 lemon slices
- ¼ C walnuts
Directions
- Preheat the oven to 350 degrees.
- Pesto: Add all ingredients except olive oil to food processor. Turn on and slowly add the olive oil to emulsify. Season with salt and pepper.
- Salmon: Cover baking sheet with aluminum foil and rub olive oil. Place salmon skin side down on baking sheet.
- Spread pesto on salmon and cover with slices of lemon. Bake for 30 minutes or until meat thermometer reads 120 degrees.
- While the salmon is cooking, toast walnuts in pan over medium heat until fragrant. Crush them up in a mortar in pestle or chop them up.
- Serve salmon on platter and sprinkle with walnuts.
