Roasted Pesto Salmon With Toasted Walnuts

Pesto Ingredients

  • ½ C basil leaves
  • 1 garlic clove - minced
  • ¼ c shredded parmesan
  • 2 T walnuts (or pine nuts)
  • 1 T lemon
  • 1 tsp red pepper flakes (optional)
  • ¼ C olive oil

Salmon Ingredients

  • 1 filet salmon (pin bones removed)
  • 3-4 lemon slices
  • ¼ C walnuts

Directions

  1. Preheat the oven to 350 degrees.
  2. Pesto: Add all ingredients except olive oil to food processor. Turn on and slowly add the olive oil to emulsify. Season with salt and pepper.
  3. Salmon: Cover baking sheet with aluminum foil and rub olive oil. Place salmon skin side down on baking sheet.
  4. Spread pesto on salmon and cover with slices of lemon. Bake for 30 minutes or until meat thermometer reads 120 degrees.
  5. While the salmon is cooking, toast walnuts in pan over medium heat until fragrant. Crush them up in a mortar in pestle or chop them up.
  6. Serve salmon on platter and sprinkle with walnuts.
